Where It Begins

We work with a network of small farms across Ethiopia, Colombia, Guatemala, and Indonesia. These aren't faceless suppliers. They're families who have been growing coffee for generations, who understand terroir the way vintners do.

Each harvest, we receive samples from our partners. These are evaluated through rigorous cupping sessions, where we assess acidity, body, sweetness, and complexity. Only the lots that meet our standards make it into our rotation.

This selectivity matters because coffee quality starts at the farm. The altitude, soil composition, processing method, and timing of harvest all influence the final cup. We can't create quality through roasting if it wasn't there from the beginning.

The Roasting Philosophy

We roast in small batches using a traditional drum roaster. Each bean variety requires a different profile. Some need longer development time to bring out their sweetness. Others require careful attention to prevent losing their delicate floral notes.

Our roaster maintains detailed logs of every batch: temperature curves, development time ratios, and sensory evaluations. This data helps us achieve consistency while remaining responsive to variations in each harvest.

Beans are never roasted more than five days before shipping. This timeline preserves the volatile compounds responsible for complex flavors. It's more expensive to operate this way, but the difference in taste is undeniable.

Why We Started

This began with frustration. One of us spent years working in commercial coffee roasting, watching excellent beans treated carelessly. The other came from restaurant management, where sourcing quality ingredients was fundamental.

We saw a gap between what specialty coffee could be and what most people had access to. So we built something straightforward: a direct path from carefully selected farms to people who care about what they drink.

There's no complicated story here. We source well, roast with precision, and ship quickly. Everything else is just detail.
